Winter Slaw

  1. 300gr Brussels sprouts
  2. 2 small shallots finely sliced
  3. 50gr hazelnuts roughly chopped
  4. 1 garlic clove crushed
  5. ½ cup Natural Yoghurt
  6. 1tsp poppy seeds
  7. 1tsp honey
  8. Juice of 1 lemon
  9. Salt and pepper to taste (I used white pepper)
  10. A splash of cider vinegar
  11. A splash of water


  1. Blanche the sprouts in a pot of boiling water – 2 minutes.
  2. Drain, run under cold water and let cool on kitchen towel for about half an hour.
  3. Make the dressing by mixing garlic, yoghurt, poppy seeds, honey, lemon, vinegar, water, salt and pepper.
  4. Put the shallots and hazelnuts in a big serving bowl.
  5. Slice your sprouts very thinly.
  6. Put the grated sprouts in the bowl with the shallots and hazelnuts.
  7. Pour the dressing over it.
  8. Mix with your hands. Don’t be prissy.
